Abstract:Muscle texture characterization is an important index to evaluate the quality of aquatic products, which is of great significance to aquaculture. The texture meter can objectively and rapidly determine the muscle texture characteristics of aquatic products, which is more and more widely used in the field of aquaculture research, and the quality difference of different aquatic products can be compared by the texture meter. This paper briefly outlines the structure and principle of the mass spectrometer, the mass spectrometry parameters for assessing the quality of aquatic products, and describes in detail the effects of different species, different feeds, different culture modes, different growth stages and different regions on the mass spectrometry characteristics of aquatic products, and finally summarizes the differences in the quality of aquatic products through the mass spectrometry parameters, as well as the correlation between the mass spectrometry parameters and other indexes, and looks forward to the trend and development of the mass spectrometry applications. Finally, we summarized the differences in muscle quality of aquatic products analyzed by texture parameters and the correlation between texture parameters and other indicators.
