Some thoughts on detecting GI aquatic products were presented in this paper. It was suggested that the products protecting regions, sample collecting seasons，and transportation requirements should be taken into careful consideration during sample collection. Pre-investigation and product evaluation were very important for the quality description and determination of detecting parameters, such as character properties, physical, chemical and nutrient indexes, taste, aroma, texture. In addition, a future prospect of GI aquatic products detecting was discussed.
