    摘要:

    为分析刺参(Apostichopus japonicas) 北方主产区烟台和大连不同养殖模式下刺参营养和功能成分的组成及其差异,分别对底播增殖、池塘养殖刺参的基本营养成分、氨基酸、脂肪酸、矿物质元素、海参多糖和海参皂苷等成分进行测试分析。结果表明,烟台底播刺参的灰分、蛋白质、脂肪、二十碳五烯酸(EPA)和甲硫氨酸等营养成分含量显著高于烟台池塘刺参,但是饱和脂肪酸、丙氨酸、钙、铁、锰、铜、锌以及海参多糖显著低于烟台池塘刺参。大连底播刺参中单不饱和脂肪酸和磷含量显著低于大连池塘刺参,而硒元素和海参多糖含量显著高于大连池塘刺参。烟台底播刺参中饱和脂肪酸以及必需氨基酸总量和总氨基酸含量低于大连底播刺参,但脂肪和单不饱和脂肪酸显著高于大连底播刺参。烟台池塘刺参中蛋白质、EPA、甲硫氨酸、谷氨酸、甘氨酸和磷含量显著低于大连池塘刺参,但丙氨酸、钙、硒、锰和海参多糖显著高于大连池塘刺参。烟台刺参的营养素指数数值大于大连刺参,其中烟台池塘刺参的营养素指数最高,大连底播刺参的营养素指数最低。综上所述,不同养殖模式以及不同产地刺参的营养成分和功能成分存在一定差异,该研究为完善刺参营养品质评价以及指导其消费提供数据支撑。[中国渔业质量与标准,2023, 13(2):01-10]

    Abstract:

    In order to analyze the differences between the nutritional and functional components of Apostichopus japonicas in different culture patterns in northern of China, Yantai and Dalian, respectively, the basic nutritional components, amino acid composition, fatty acid composition, mineral element composition and functional components (sea cucumber polysaccharides and glycosides) of sea cucumber in bottom-sowing and pond culture patterns were tested and analyzed. The results showed that the nutrient contents, such as ash, crude protein, crude fat, EPA and methionine of Yantai sea cucumbers in bottom-sowing culture pattern were significantly higher than those in pond culture pattern, while the contents of SFA, alanine, Ca, Fe, Mn, Cu, Zn and sea cucumber polysaccharides of sea cucumbers were significantly lower than those in pond culture pattern. For Dalian sea cucumbers, the contents of MUFA and P in bottom-sowing were significantly lower than those in pond, while the contents of Se and sea cucumber polysaccharides of sea cucumbers were significantly higher than those in pond. For sea cucumbers in bottom-sowing culture pattern, the contents of SFA fatty acids, total essential amino acids and total amino acids in Yantai were lower than those in Dalian, but the contents of fat and MUFA were significantly higher than those in Dalian. For sea cucumbers in pond culture pattern, the content of protein, EPA, methionine, glutamic acid, glycine, and P in Yantai were significantly lower than those in Dalian, but the contents of alanine, Ca, Se, Mn and sea cucumber polysaccharide were significantly higher than those in Dalian. In terms of the nutrient-rich index data of the sea cucumber samples, it could be concluded that the nutrient index of Yantai sea cucumbers was higher than that of Dalian sea cucumbers. Furthermore, the nutrient index of Yantai sea cucumbers in pond culture pattern was the highest, and that of Dalian sea cucumbers in bottom-sowing culture pattern was the lowest. The results showed that there were certain differences between the nutritional and functional components of A. japonicus in different culture models and different regions. The research results provided references for improving the nutritional and quality evaluation of A. japonicus and the data supports for guiding the market consumption.[Chinese Fishery Quality and Standards, 2023, 13(2): 01-10]
