Abstract:Antarctic krill (Euphausia superb) has been paid more and more attention in the world because of its huge biomass and potential value of fishery resources. Antarctic krill has become an important highquality biological protein library for its rich protein. In addition, it also contains nutrients such as lipids, minerals, and active substances such as astaxanthin, chitin and others. At present, the high fluorine content has been the bottleneck of its largescale processing and utilization. In addition, the process of processing and utilization of antarctic krill is accompanied by the migration of fluorine, e.g., the fluorine in the shell will migrate to the muscle, which seriously affects the food value of krill. How to scientifically evaluate the limitation brought by fluorine migration and develop more highvalue products has become a key problem to be solved urgently. In this paper, the influence factors of fluorine migration in Antarctic krill were reviewed, aiming to provide reference for the further development and utilization of antarctic krill and the development of krill industry chain.
