    摘要:

     鳕鱼是全世界年捕捞量最大的鱼类之一,以冻鳕鱼为原料加工干鳕鱼已经有500多年的历史。吉林省是我国干鳕鱼的主要加工出口地,干鳕鱼及其制品加工出口已经成为吉林省延边地区一个具有广阔发展前景的产业。本文主要介绍了吉林省加工出口干鳕鱼的发展情况、存在问题及对策建议,对干鳕鱼及其制品中甲醛含量超标问题进行了分析探讨。

    Abstract:

     Cod is one of the largest fish in catch and dried cod which is also known as processed frozen cod has witnessed a history of 500 years. Jilin Province is the main exporter of processed dried cod fish in China, while the export of dried cod fish and their processed products has become an industry with broad future prospects in Yanbian autonomous region of Jilin Province. The present situation of processing and export dried cod in Jilin Province was described in this paper and  problems and countermeasures on the excessive levels of formaldehyde in dried cod was analyzed and discussed.
